Is it possible to configure Godot to use VSCodium, the fork of Visual Studio Code which removes its telemetry/branding, instead of Visual Studio Code? If so, how would I go about doing so?

You use it the exact same way one would use vscode, by changing the Exec Path in the External tab in Editor Settings to an appropriate location.
