I am trying to understand how point and click works in Godot. I searched and found out that the only method is with Escoria. Where can I find any tutorials and documentations about how to do a point and click game like The Interactive Adventures of Dog Mendonça and Pizzaboy®, by OKAM Studio and Ravenscourt?

Escoria is a framework for point and click games, but you do not need it to make point and click mechanics in Godot (those can be made in many many ways).

Here is the manual for Escoria if you want to check it:
https://fr.flossmanuals.net/creating-point-and-click-games-with-escoria/what-is-point-and-click-games/

I don't know of any tutorials, that framework is focused for production of a specific type of games and those who pick it already know the generic structure of the genre, making detailed tutorials less likely to happen.
