I have a lot of images but I might not use all of them. When I export the project, will the unused images be exported ass well?

Yes, it does not have a way to know if you use a Resourse or not.

You can manually select what export and what not in the export section of the export window, selecting individual assets or by using filters.

Also use .gdignore files on directories to prevent importing unwanted assets.
